<![CDATA[<a href="http://baike.baidu.com/view/116906.htm" target="_blank">矿物质</a> 19世纪中叶就发现仅用蛋白质、脂肪和碳水化合物饲喂动物不能维持其生命，因而认为食物燃烧后的灰分必具有生理作用。但补充饲以灰分后动物仍死亡。直到20世纪初发现了维生素，并逐渐阐明了矿物质的重要作用，才对营养素有了较全面的了解。人体内有数十种矿物元素，广泛分布于全身。目前尚未能证明这些元素全部都具有生理功能。其中少部分元素具有生理功能的，被称为必需元素。按其在体内的含量又分为大量营养元素和微量营养元素。前者有钙、磷、镁、钾、钠、氯、硫。后者有铁、铜、锌、锰、钼、铬、钴、镍、钒、锡、碘、硒、硅、氟等。<br /><br />钙、磷、镁是骨骼和齿的主要成分。镁又是植物叶绿素的重要成分。钙、磷、镁的生理功能为：钙与镁在肌纤维收缩、神经传导、激活生化反应中，以及钙在凝血作用中都起着极重要的作用。磷与能量代谢有关。三磷酸腺苷（ATP）是储存和释放能量的重要化合物。镁为产生三磷酸腺苷的激活物质。镁、钾、钠、氯都是维持体液酸碱平衡和适宜渗透压的重要电解质。硫为含硫必需氨基酸&mdash;&mdash;蛋氨酸和胱氨酸，和几种维生素，如硫胺素、泛酸和生物素的组分。硫与氢组成的巯基在生物反应中有重要作用。<br /><br />在微量营养元素中，铁是<a href="http://baike.baidu.com/view/519.htm" target="_blank">血红蛋白</a>的重要成分，为携带氧的载体。铜与铁在血红蛋白合成中有协同作用。碘是甲状腺素的主要成分。铬是糖耐量因子的成分。钴是维生素B12的成分。已知锌是40余种酶的辅基，缺乏时将导致生长停滞和性发育不成熟。锰、钼、硒也都是酶的成分。氟由于具有防龋齿作用，因此，也是必需元素。其余的元素如镍、钒、锡、硅在动物实验中发现有缺乏表现，但其机制尚未阐明。必需元素摄入过量时，对机体也可产生不利影响。<br />]]>

<![CDATA[<a href="http://baike.baidu.com/view/184.htm" target="_blank">碳水化合物</a>（<a href="http://baike.baidu.com/view/83753.htm" target="_blank">糖类</a>）供给生物热能的一种主要营养素。食物中的碳水化合物是多糖（淀粉）和纤维素。多糖的降解产物单糖，可为绝大多数生物所利用，而纤维素则仅在具有纤维素酶的生物体内才能被降解和利用。在膳食热量摄入不足时，机体的脂肪组织和蛋白质将被分解以补充热量的不足。表现为生长停滞，体重下降。严重时可致死亡。人类的饮食习惯不同，膳食碳水化合物供给的热量一般占总热能消耗的45～80％。在经济不发达地区可高达 90％以上，这是因为碳水化合物是最廉价的热能来源。若膳食碳水化合物的热量过低，脂肪热量过高将会发生酮症。减肥的人常过多的限制碳水化合物，以限制热量的摄入，并增强劳动以消耗体脂，在这种情况下也会出现酮症。因此，来源于碳水化合物的热能不宜少于总热能的45％。<br /><br />纤维不能为人和多数动物所消化利用。<a href="http://baike.baidu.com/view/178.htm" target="_blank">膳食纤维</a>包括纤维素、半纤维素、果胶、藻多糖和木质素。早年在测定纤维时，用酸、碱消化植物组织，其残渣为粗纤维，其余的纤维组分大部分在测定过程中遭受损失。现在的新方法可分别测定纤维的各种组分。膳食纤维经胃肠道中细菌的纤维素酶发酵，可有大部分被酶解为短链脂肪酸。草食动物即以此为能量来源。<br /><br />流行病学及实验室工作证明，膳食纤维可降低<a href="http://baike.baidu.com/view/10179.htm" target="_blank">肿瘤</a>的发生，如结肠癌。其原因在于它们的亲水性和形成凝胶的能力，增大粪便体积，利于排出，从而加速致肿瘤活性的固醇代谢物的排泄，减少了与结肠接触的时间。膳食纤维也有利于对其他疾病，如冠心?⒏哐ⅰ⑻悄虿〉鹊姆乐危讼钛芯可性诩绦小?<br /><br />蛋白质、脂质和碳水化合物都属于产生热能的营养素。在进行一切生物反应时必须要有足够的热能。膳食蛋白质、脂质和碳水化合物所供给的热能，在扣除未被消化吸收部分后的热能值，称为生理热能值。每克蛋白质、脂肪和碳水化合物的生理热能值分别为4.0、9.0和4.0千卡。这就是通常用以计算膳食热量的数据。<br /><br />热量的摄入与消耗，在正常情况下，应处于平衡状态，即摄入量与消耗量相等，是为能量平衡。生物在生长阶段，机体的物质在增加，尤其是蛋白质和脂质，因而有能量的储存。但摄入量超过需要时，即以脂质的形式存于体内。与此相反，在摄入量低于需要时，将消耗自身的物质导致消瘦。<br />]]>

<![CDATA[　　　<img alt="" src="/common/js/fckeditor/editor/images/smiley/msn/angry_smile.gif" /><a href="http://baike.baidu.com/view/72839.htm" target="_blank">脂质</a> 包括中性<a href="http://baike.baidu.com/view/16.htm" target="_blank">脂肪</a>和类脂。前者主要是供给能量，后者多具有重要的生理功能。脂质的基本组成为脂肪酸，有必需脂肪酸和非必需脂肪酸之分。必需脂肪酸主要有3种，即亚油酸、亚麻酸和花生四烯酸。这3种必需脂肪酸的生物活性不相同，以花生四烯酸的为最大，亚油酸的为其次，亚麻酸的为最?Ｓ裳锹樗嵫苌?0碳与 22碳的长链脂肪酸，在脑与视网膜的发育与功能中有着特殊的作用。动物缺乏必需脂肪酸时，生长迟缓，出现皮肤症状（脱毛、湿疹性皮炎、鳞皮等）。有人报道幼儿缺乏必需脂肪酸时也有同样症状。但成年动物和人很难产生缺乏症状，这是因为体内有较大量亚油酸储存之故。必需脂肪酸缺乏，可引起细胞膜磷脂的脂肪酸组成的改变，因而影响膜的功能；并可减低前列腺素的合成。前列腺素的前体为18碳和20碳的多不饱和脂肪酸。有人建议以测定血中三烯酸和四烯酸的比值，作为必需脂肪酸是否缺乏的指标。这是由于脂肪酸代谢过程中有酶系统的竞争作用。当亚油酸缺乏时，由亚油酸延长碳链并经脱饱和作用而生成花生四烯酸的量减少，另一族脂肪酸&mdash;&mdash;油酸的代谢加强，大量生成二十碳三烯酸，因此血中三烯酸与四烯酸的比值乃有增高。人的必需脂肪酸需要量按其热量计约为每日热能需要量的1～2％。<br />]]>

<![CDATA[<a href="http://baike.baidu.com/view/15472.htm" target="_blank"><img alt="" src="/common/js/fckeditor/editor/images/smiley/msn/shades_smile.gif" />蛋白质</a> 机体组织细胞成分主要为蛋白质，体液也含蛋白质。蛋白质的营养作用在于它的各种氨基酸。组成食物蛋白质的氨基酸有20余种，其中有数种不能在人体与动物体内合成，而必须获自食物，这些氨基酸被称为&ldquo;必需氨基酸&rdquo;，即蛋氨酸、赖氨酸、色氨酸、苏氨酸、缬氨酸、苯丙氨酸、亮氨酸和异亮氨酸。此外，幼儿生长尚需组氨酸，禽类如鸡还需精氨酸和甘氨酸。除这些必需氨基酸以外的其他氨基酸，因为都能在机体内合成，故被称为&ldquo;非必需氨基酸&rdquo;。<br /><br />各种蛋白质的氨基酸种类与含量是不相同的。有的蛋白质缺少某种必需氨基酸，如明胶蛋白不含色氨酸，玉米胶蛋白不含赖氨酸。因此，评价一种食物蛋白质的营养价值，主要应视其所含的各种必需氨基酸量是否能满足机体的需要。不足时，机体就不能有效地合成体蛋白质，其他种氨基酸只能经脱氨代谢，生成糖（糖原异生）和作为燃料供给热能。由此可知，食物蛋白质的氨基酸模式是决定其质的优或劣的关键。现在国际上以全鸡蛋的必需氨基酸模式，或人乳中必需氨基酸模式，或根据人体所必需的氨基酸量提出的假设模式，作为评价食物蛋白质营养价值的标准。这就是所谓蛋白质营养价值的化学分评价法。另外，还有生物评价法，是根据食物蛋白质在机体内的利用率作出营养评价。常用的有&ldquo;蛋白质生理价值&rdquo;（简写为BV，为体内存留氮量与吸收氮量的百分比）、&ldquo;净蛋白质利用率&rdquo;（简写为NPu，为体内存留氮量与摄入氮量的百分比，即 BV&times;蛋白质的消化率）、或&ldquo;蛋白质效能比值&rdquo;（简写为PER，为摄入每克蛋白质的体重增加量）。<br />]]>
