<p style="LINE-HEIGHT: 120%"><span lang="EN-US" style="FONT-SIZE: 9pt; COLOR: black; LINE-HEIGHT: 120%"><br /></span><span style="FONT-SIZE: 9pt; COLOR: black; LINE-HEIGHT: 120%"><font face="宋体">　　不过也有特例，曾有日本学者报告过热带普通种<span lang="EN-US">&mdash;&mdash;</span>玉足海参有<span lang="EN-US">&ldquo;</span>冬眠<span lang="EN-US">&rdquo;</span>的习性。</font><font face="宋体"><span lang="EN-US"> <br /></span>在浩瀚的大海中，海参渺小得实在是微不足道。它没有眼睛，没有牙齿，也没有任何抗敌的锐利武器。虽然从不离开大海，却不会游泳，只靠管足和肌肉的伸缩在海底蠕动，爬行一小时还不到<st1:chmetcnv w:st="on" unitname="米" sourcevalue="3" hasspace="False" negative="False" numbertype="1" tcsc="0"><span lang="EN-US">3</span>米</st1:chmetcnv>远。面对危机四伏的海底环境和凶残狡诈的各种敌害，它以特殊的斗争形式保护自己。</font><font face="宋体"><span lang="EN-US"> <br /></span>　　遇到其他动物袭击时，海参会迅速地把体腔内又粘又长的肠子、树枝一样的水肺一古脑儿地喷射出来，让敌人饱餐一顿，而自身逃得无影无踪。没有内脏的空躯壳海参并不会死掉，大约经过<span lang="EN-US">50</span>天时间，又会生出一副新内脏。</font><font face="宋体"><span lang="EN-US"> <br /></span>　　更有趣的是海参会像变色龙一样随机应变，生活在礁石附近的海参，体色会变成淡蓝色，而居住在海草和海带附近的海参则为绿色。虽然没有大脑，海参却真的很聪明，这种变化的体色正是求生的本能，能有效地躲避天敌的伤害。</font><font face="宋体"><span lang="EN-US"> <br /></span>此外，海参还具有海星一样的<span lang="EN-US">&ldquo;</span>分身<span lang="EN-US">&rdquo;</span>功能。将它断为数段，投放海里，经过<span lang="EN-US">3</span>－<span lang="EN-US">8</span>个月<span lang="EN-US">,</span>每截又会长成完整的活参。有的海参还有<span lang="EN-US">&ldquo;</span>自切<span lang="EN-US">&rdquo;</span>本领，当海参感到对外界环境不适宜时，能将自身切成数段，以后每段又会长成新的个体。</font><font face="宋体"><span lang="EN-US"> <br /></span>　　海参适应生态环境变化趋利避害的本领令人惊叹不已。它生性迟钝，几乎没有防御能力，所以与它营寄生和共生的动物达<span lang="EN-US">10</span>多种，其中最著名的是隐鱼。这种鱼体型细长而光滑，长约<span lang="EN-US">15</span>厘米，时常钻进海参的体腔内寻找食物或躲避敌害。隐鱼出入参体的动作既麻利又滑稽：先是用小脑袋探寻海参的肛门，接着把尾巴卷曲直到身体完全钻入海参体内。有人发现，在一只海参的体内竟栖居了<span lang="EN-US">7</span>尾以上的隐鱼。隐鱼白天把参体当作舒适的寓所<span lang="EN-US">,</span>夜里出来寻找一些小甲壳之类的动物充饥。即使这样，海参并不拒绝做寄主，因为隐鱼的排泄物是它的食料。它们彼此和睦共处，从不分离。</font><font face="宋体"><span lang="EN-US"> <br /></span>当风暴即将来临之际，海面风起浪涌时，海参就躲到石缝里藏匿起来。渔民发觉海底不见海参时，就知道风暴即将来临便赶紧收网返航。在通讯工具不发达的年代，海参充当天气预报的功劳还真不小。</font><font face="宋体"><span lang="EN-US"> <br /></span>　　海参在西方人眼中可谓不屑一顾，然而中国人却认为海参是美味佳肴。远在几百年前，我国人民就知道吃海参，并把海参与干贝、鱼翅、鲍、鱼肚、鱼唇、鱼籽、燕窝一同誉为<span lang="EN-US">&ldquo;</span>海八珍<span lang="EN-US">&rdquo;</span>。明清时期，海参的美食价值，已得到世人的充分肯定。海参的药物作用，在明朝李时珍的《本草纲目》中就有记载，在清朝赵学敏编辑的《本草纲目拾遗》中记载尤详。大体意思是：辽东产的海参，体色黑褐，肉糯多刺，称为辽参或刺参，不仅其品质最佳，而药性甘温无毒，具补肾滋阴、生脉血、治下痢及溃疡等功效。因其药性温补，足敌人参，故名海参。</font><font face="宋体"><span lang="EN-US"> <br /></span>　　海参不易采捕，且加工复杂，故历来身价昂贵。采捕海参要穿潜水衣潜入海底寻找，捕到海参后第一件事，就是赶紧用盐和矾把它加工起来，才能保存住，否则会自行溶为一团凝胶而无法食用。商品参以个头齐、肉肥厚、体完整、刺挺拔、开口正、干度足、体表光泽、体内无余肠泥沙、每斤在<span lang="EN-US">40</span>个以内者为上品。</font><font face="宋体"><span lang="EN-US"> <br /></span>　　食用海参一般用的都是干制品，只有少数地区的渔民吃鲜海参。中科院海洋所的海参专家廖玉麟介绍说，干海参的加工方法，随地区不同而有很大差异。一般来讲，总是先用大火煮鲜海参，使其脱水，缩小，定形，然后彻底晒干或烘干。我国北方加工海参过程比较复杂，产品质量好。北方煮参要煮两次，第一次煮约一个多小时，然后捞出加盐搅拌，放置于煮参的清液中保存<span lang="EN-US">7</span>－<span lang="EN-US">8</span>天或者一个多月后，再进行第二次煮参。可将原汤放入锅内加盐至饱和盐水，然后加入海参继续煮，待捞出后，海参便干固并有盐霜挂附，见有<span lang="EN-US">&ldquo;</span>白霜<span lang="EN-US">&rdquo;</span>即可。最后是加草木灰或木炭灰搅拌，晒干。</font><font face="宋体"><span lang="EN-US"> <br /></span>　　海参肉质柔软，营养丰富，是典型的高蛋白、低脂肪食物，滋味腴美，风味高雅，历来是宴席中的上乘佳肴，在大雅之堂上往往扮演着<span lang="EN-US">&ldquo;</span>压台轴<span lang="EN-US">&rdquo;</span>的角色。时下按照北京的现行价格，凡在<span lang="EN-US">500</span>元以下的宴席上难得见到海参出场。</font><font face="宋体"><span lang="EN-US"> <br /></span>　　现代医学曾对刺参肉的蛋白质做过详细的分析和研究，发现其中含有硫酸软骨素的一种成分，硫酸软骨素的减少与肌肉的衰老有关。所以我国人民，自古以来把海参当作一种珍贵和滋补的食品，是可以证实的。</font><font face="宋体"><span lang="EN-US"> <br /></span>　　海参除了供食用外，还可以作药用。具有滋补壮阳之功，可治疗肺结核、神经衰弱、阳痿等。特别是对肺结核咯血、再生障碍性贫血的治疗效果较为明显。在中国人的眼中，海参能壮阳的作用尤其突出。清代《本草以新》云，海参有<span lang="EN-US">&ldquo;</span>补肾益精，壮阳疗痿<span lang="EN-US">&rdquo;</span>的功效。<span lang="EN-US"> <o:p></o:p></span></font></span></p>

<p style="LINE-HEIGHT: 120%"><span style="FONT-SIZE: 9pt; COLOR: black; LINE-HEIGHT: 120%"><font face="宋体">　　海参作为中国名菜之一，如今在国外许多城市里的中国餐馆都能吃到。</font><span lang="EN-US"><br /></span><font face="宋体">　　其实，大自然中海参的天敌非常少。大概海鸥会吃浅水区的海参，甲壳类也会吃海参。大形海星的胃中和一些鱼类的胃含物中检出过海参。人类可能是海参最可怕的敌人，如今越来越多<span lang="EN-US">&ldquo;</span>食参族<span lang="EN-US">&rdquo;</span>使得几乎全球都在捕捉海参出售，特别是我国和印度－西太平洋各岛。</font><span lang="EN-US"><br /></span><font face="宋体">　　厄瓜多尔的加拉帕戈斯群岛由于达尔文在<span lang="EN-US">1835</span>年的研究访问而出名，是举世公认的在生物学上有着非凡重要性的地方。根据世界自然基金会（<span lang="EN-US">WWF</span>）的一项研究发现，自<span lang="EN-US">1992</span>年来，厄瓜多尔出口的海参达<span lang="EN-US">400</span>万只，这是在海参捕捞地点从已枯竭的厄瓜多尔本土转至加拉帕戈斯群岛后所累计的数量。所捕获的海参多数是运往东亚地区，台湾和香港是主要转口贸易基地。加拉帕戈斯的刺参在亚洲市场售价较高，以致遭到严重捕捞，捕捞地点甚至向北延伸至墨西哥海岸。在群岛禁止渔业活动<span lang="EN-US">4</span>年后，附近的海参仍不断地被非法捕捞。</font><span lang="EN-US"><br /></span><font face="宋体">　　一只野生海参长大至少需要二三年，而一个熟练的潜水员在海底作业，两个小时就能捞采上百斤的海参。如果是偷海参的话，两条<span lang="EN-US">&ldquo;</span>偷海<span lang="EN-US">&rdquo;</span>船一个晚上就可捞捕出价值上万元甚至几十万元的海参。一个<span lang="EN-US">&ldquo;</span>偷海<span lang="EN-US">&rdquo;</span>人，一夜之间即可暴富。</font><span lang="EN-US"><br /></span><font face="宋体">　　京城享有<span lang="EN-US">&ldquo;</span>海参王<span lang="EN-US">&rdquo;</span>盛誉的烹调大<st1:personname w:st="on" productid="师王义均">师王义均</st1:personname>先生告诉我们，现在市场上出售的养殖海参越来越多，大约占一半，但仍然供不应求。与<span lang="EN-US">50</span>年前相比，天然海参的数量日趋减少，这是其价格不断攀升的根本原因。好一点的干刺参一斤能卖到<span lang="EN-US">2000</span>元以上。</font><span lang="EN-US"><br /></span><font face="宋体">　　海参专家廖玉麟说，自然资源已经远远不能满足人们日益增长的消费需求。刺参因其商业价值，人工养殖的热潮正在蓬勃兴起。而其他品种，遭受过度捕捞的同时又缺乏人工养殖，已成为濒危动物。<span lang="EN-US">&ldquo;</span>过度捕捞使这种古老的海底动物陷入严重的生态问题。<span lang="EN-US">&rdquo;<o:p></o:p></span></font></span></p>

<p style="LINE-HEIGHT: 120%"><span style="FONT-SIZE: 9pt; COLOR: black; LINE-HEIGHT: 120%"><font face="宋体">　　<span lang="EN-US">20</span>世纪<span lang="EN-US"> 80</span>年代初，我国学者在研究<span lang="EN-US">hGAG</span>的抗肿瘤作用时发现其可以引起实验动物的出血，从而使人们逐渐认识其抗凝作用。研究者曾用<span lang="EN-US">hGAG</span>对正常 人及心、脑血管血栓性疾病病人进行治疗，发现其具有抗凝、降低血液粘稠度及降低血脂的作用。为使玉足海参这一海洋生物资源得到更好地利用和开发，研究者对<span lang="EN-US"> hGAG</span>的抗栓作用机制进行了研究。<span lang="EN-US"><o:p></o:p></span></font></span></p>

<p>海藻燕窝的鉴别：</p>
<p>海藻类燕窝多见于市面的上燕饼和燕条。假的燕窝是全用海藻经漂白、晒干、水煮制成的人造假燕窝，这类燕窝色泽实白，无光泽，质料坚硬，有海藻味。而天然燕条色泽通透，稍带黄色，有光泽无异味。</p>]]>

<![CDATA[<p>燕窝分为洞燕、厝燕、加工燕三个大类</p>
<p>1、洞燕</p>
<p>洞燕为采自岩石洞的开然燕窝，又分为白燕、毛燕、血燕、和红燕；</p>
<p>白燕：燕鸟第一次筑的巢，质地较纯，杂质少，形态整齐均称，色牙白，光洁透亮，呈半碗状。长6。5~10厘米，宽3-5厘米，重12克左右，根小而薄，略有清香，涨发出料率高，是最佳品。旧时常作官场赠礼，并作贡品，故又称为官燕和贡燕。</p>
<p>此外还有龙牙燕、象牙燕、暹罗燕等品种前两种稍大，略有毛，后一种由南洋进口，黄而较小，无根无毛。</p>
<p>毛燕：第一次燕窝被采载后而筑的窝，因筑时较匆忙，形态己不完整，杂质较多，色灰暗，又称灰燕，质量次于白燕。品种有牡丹毛燕、窝体较厚，色较白而有色泽，毛、藻等杂质较少，为毛燕中的上品；暹罗毛燕窝壁薄而毛多，色白杂灰黑。</p>
<p>血燕：第二次窝被采后，产卵期近，赶筑的第二个窝，窝形已不规则，毛藻等杂质更多，且间夹有紫黑色的血丝，质次于毛燕。</p>
<p>红燕：系燕窝筑于岩壁上，由燕鸟的红色渗出液浸润染成，通体呈均匀的暗红色，此类燕窝产量不多，含矿物质较多，营养及功效较好，医家视为珍品，商品价格高于白燕，也被称为血燕，但与前面血燕有明显示区别。《本草纲目中》称为燕窝根。</p>

<p>2、厝燕</p>
<p>厝燕是指人工饲养的燕鸟在室内筑的窝，较洞燕整齐光洁，应用效果不及洞燕；日本称之为食用穴燕。</p>
<p>3、加工燕</p>
<p>是指将毛燕浸发后，去除藻、毛等杂质再用海藻胶粘结成饼状。</p>
